My buddy just picked up an 2007 Bellagio with Marzocchi forks and is now looking to improve the front suspension for more spirited riding. He weighs about 210lbs. He's considering options like changing the springs, adding preload spacers, adjusting oil weight or tweaking rebound and compression settings. Alternatively, hes wondering if swapping to more modern forks like Aprilia Showas or Ohlins would be a better upgrade. Also curious about the fork diameter.

Tell him to start by upgrading the springs and using heavier fork oil, it's a cheap fix and might feel a lot better. If that's not enough, modern forks like Showas or Öhlins could work, as long as the fork diameter fits

I understand your friend's concern!
The stock Bellagio suspension isn't stiff enough for a 210lb, especially for spirited riding.
I'd also go with @Tracey2's idea.
The first and most cost-effective step is definitely to upgrade the fork springs to a rate appropriate for his weight.
Also swap the fork oil for a higher weight to improve damping, perhaps a 10W or 15W.
This alone will make a world of difference for spirited riding without breaking the bank.
Doing a full fork swap is a significant undertaking that requires matching the triple clamps, wheel, and brake calipers, which can quickly become very expensive.
The Showa forks from an Aprilia RSV Mille can work, but it's a project for a skilled mechanic.
I'd strongly suggest starting with springs and oil.
If that's still not enough, then I'd consider a cartridge kit for the Marzocchi forks next before a full swap!

Stock fork diameter is 43mm, so if you go the swap route, the new forks have to be compatible or be ready for custom work
